The Ultimate Luxury Ireland Itinerary: Castles, Cliffs, and the Craic

Gothic stone cloisters and courtyard at Adare Manor luxury hotel, County Limerick, Ireland, host of the 2027 Ryder Cup.

Ireland was not on my radar the way it should have been. I knew it would be beautiful, I knew the hospitality would be warm, and I knew the castles were real. What I did not expect was to come home completely converted. Nine days, six properties, one castle wedding, and a stop at the most dramatic coastline I have ever stood in front of. Below is everything I learned, every honest take, and every detail you need to actually plan this trip.

The Westbury, Dublin: The Heart of the City

Best For: Walkability, world-class cocktails, and the most central luxury address in Dublin.

For a first night in Ireland, there is no better choice than The Westbury. Tucked just off Grafton Street, Dublin’s premier luxury shopping street, you are perfectly positioned between Trinity College and St. Stephen’s Green on one side and the notorious nightlife of Temple Bar on the other. Everything that makes Dublin worth exploring is within easy walking distance, including the city’s top theatres, museums, art galleries, and the Book of Kells. It is the kind of location that makes first-time visitors feel like they instantly understand the city.

The Insider Scoop: The 205 rooms feature crisp Lissadell linens, marble bathrooms with heated floors throughout. For families, the hotel offers connecting room configurations making it one of the few true luxury options in Dublin that works well for groups. For those seeking the pinnacle of Dublin luxury, the P.V. Doyle Presidential Suite is a truly grand experience. The Gallery, the hotel’s iconic lounge, serves one of Dublin’s most celebrated afternoon teas overlooking Grafton Street and is worth reserving in advance.

Don’t Miss: The Sidecar Bar. Voted Ireland’s best hotel cocktail bar and ranked the number one hotel in Ireland by Conde Nast Traveller, The Westbury earns both distinctions in large part because of this bar. Each year the team of seven to eight bartenders individually develops a new cocktail, then gathers for what can only be described as a spirited round-table roast session, pushing each other’s creations until every drink reaches its absolute best version. The result is one of the most thoughtfully crafted cocktail menus you will find anywhere in the country.

CFS Travel Perks: Upgrade on arrival (subject to availability), daily full Irish breakfast, $100 food & beverage credit, and early check-in/late check-out.

Ashford Castle, County Mayo: A Royal Welcome

The historic stone facade of Ashford Castle in County Mayo, Ireland

The historic stone facade of Ashford Castle in County Mayo, Ireland, featuring medieval turrets and the stone bridge over the river leading to the luxury estate entrance.

Best For: The most authentic castle experience in Ireland, destination weddings, and guests who want history they can actually feel.

Ashford Castle does not feel like a hotel that was designed to look like a castle. It is a castle, and that distinction changes everything from the moment you arrive. The tree-lined drive builds the anticipation perfectly, and when you pass through the stone moat gate onto the 350-acre estate overlooking Lough Corrib, you will feel the weight of 800 years of history in a way that no renovation could manufacture. This 83-room property, owned and operated by the Red Carnation Hotel Group, oozes authenticity at every turn. The rooms are decorated with genuine antiques fitting of Ireland’s Gilded Age, the staff have in many cases worked here for decades, and the sense of place is unlike anything else on this itinerary.

We were fortunate enough to be here for a destination wedding, and I have to say it was one of the most spectacular events I have ever attended. The wedding was planned by Olivia Buckley of Olivia Buckley International, who is widely regarded as one of the best wedding planners in Ireland. What struck me most was that you barely noticed her presence during the event itself, which is exactly the hallmark of truly great planning. Every musical moment, every speech, every transition was perfectly paced and beautifully curated. From Irish bagpipers greeting guests on arrival to singers, dancers, musicians, and magicians woven throughout the evening, the entertainment never stopped.

The Experience:

The Arrival: When you walk through the main doors you will be greeted by ten to twelve staff members and a dedicated guest experience manager. It sets the tone for everything that follows.

The Personal Touch: The staff at Ashford are famous for their intuition. At lunch one afternoon, my partner casually mentioned he enjoyed strawberry jam. Within minutes our waiter appeared with a jar of the kitchen’s summer-preserved Strawberry Lemon Verbena Jam, accompanied by the team member who had made it. That moment is Ashford Castle in a single story.

CFS Travel Perks: Welcome drink on arrival, daily full Irish breakfast for two, $100 USD food and beverage credit per room per stay, complimentary green fees, early check-in subject to availability, late check-out subject to availability, and upgrade to the next room category subject to availability.

The Cliffs of Moher: A Non-Negotiable Stop

Located on the drive between County Mayo and County Limerick, the Cliffs of Moher are a geographical masterpiece. No photo can prepare you for the scale of the cliffs against the Atlantic. Plan for at least an hour to truly take in the majesty of this UNESCO Global Geopark.

Adare Manor, County Limerick: Precision Luxury

Complimentary Pashley bikes available to guests at Adare Manor, County Limerick, Ireland, with seasonal red heather landscaping along the Gothic stone manor exterior.

Best For: Golf enthusiasts, Ryder Cup 2027 travel planning, group golf trips, and guests who want the most impeccably finished luxury manor experience in Ireland.

While Ashford Castle gives you authentic history and romantic patina, Adare Manor represents precision luxury at its absolute peak. Everything has been updated to the highest possible standard since JP McManus purchased and renovated the property in 2015, and the difference is immediately apparent from the moment you arrive. Every hallway, every suite, every garden bed has been elevated to a level that is hard to compare to anything outside of Augusta National. The Tudor-Gothic manor was built in 1832 by the second Earl of Dunraven and features 365 windows and 52 chimneys set against one of the most dramatic neo-Gothic exteriors in Europe.

The location is also one of the most practical on this entire itinerary. The property sits just 30 minutes from Shannon Airport, making it one of the easiest luxury manor arrivals from the US on seasonal nonstop flights, and the charming village of Adare, widely regarded as Ireland’s prettiest village, sits just outside the manor gates with thatched cottages, excellent restaurants, antique shops, and great pubs all within walking distance.

Highlights for Your Stay:

Championship Golf and the 2027 Ryder Cup: This is the golf story in Ireland right now. The Tom Fazio-designed course hosts the 2027 Ryder Cup from September 13 to 19, 2027, and playing it before or after the event is a genuine bucket list experience. Fazio rebuilt every tee, bunker, green, and water feature from scratch. 220,000 tonnes of sand were shipped in to keep fairways dry year-round, and Sub Air technology was installed beneath every putting surface. The River Maigue comes into play on 14 holes, and the par-5 18th, with water cutting aggressively up the right and the manor itself rising behind the green, is destined for some of the most dramatic Ryder Cup moments in recent memory. Tiger Woods, Rory McIlroy, Brooks Koepka, and Xander Schauffele have all played here. Importantly, the only way to play the course is to stay on property, making a hotel booking essential for any serious golfer planning around the 2027 event. Green fees run approximately €450 per round during peak season. If you are planning a father-son trip, golf buddies trip, or any group golf itinerary in Ireland, this is the anchor property to build around.

Estate Activities for Everyone: Beyond golf the manor offers Gun Dog Trials, falconry, archery, clay pigeon shooting, a two-hour equestrian trail ride through ancient stone ruins at the nearby Clarina Equestrian Centre, padel, yoga, pilates, a golf simulator, and retro Pashley bikes to borrow for exploring the estate and village. A Woodland Walk treasure-hunt trail with fairy markers winds through the grounds, making this surprisingly one of the most family-friendly luxury properties on this itinerary. A private cinema shows kid-friendly films during the day and classics for adults at night.

The Gardens: The formal French parterre gardens, which include a 400-year-old Cedar of Lebanon tree, stretch out from the manor in perfect geometric symmetry across the 840-acre estate. The seasonal landscaping, including vivid heather planted at the manor entrance, is changed throughout the year to match the season and is genuinely one of the most beautiful approaches of any property in Ireland.

Dining: Dinner at The Oak Room, the Michelin-starred restaurant, was one of the finest meals of the trip. The Carriage House offers a more relaxed evening option and is equally excellent. The Gallery serves one of the most celebrated afternoon teas in Ireland and is included as a CFS perk. The Harry Lowe chocolatier cottage on the estate is a must-stop.

CFS Travel Perks: Upgrade on arrival, daily breakfast, and a complimentary Afternoon Tea for two (min. $100 value).

Sheen Falls Lodge, County Kerry: Nature Immersed

Best For: A restorative escape on the Wild Atlantic Way.

Located just five minutes outside Kenmare, Sheen Falls Lodge is a Relais & Chateaux property that earns its membership completely. The 300-acre estate sits along the River Sheen and many of the 77 rooms and suites overlook the Sheen Waterfall directly, giving you a natural soundtrack that genuinely slows everything down. Stone, wood, and tweed finishes throughout feel deliberate rather than decorative.

The property sits at the gateway to both the Ring of Kerry and the Wild Atlantic Way, making it the ideal base for the most scenic driving in Ireland.

CFS Travel Perks: Upgrade on arrival subject to availability, daily buffet breakfast for two, a complimentary bottle of house wine in room on arrival, a tour of Kenmare in the hotel's 1936 vintage Buick, and early check-in and late check-out subject to availability.

The Killarney Park: The Local Gem

Best For: Merging town energy with National Park beauty.

Honestly, The Killarney Park was the property I was knew the least about going into this trip and it ended up being one of the most pleasant surprises of the entire itinerary. A multi-million euro renovation shows throughout, the suites are beautifully designed, and the finishes are far more elevated than the price point suggests. You are right in the heart of Killarney town, walkable to the best traditional pubs, live music, and local restaurants in Kerry, while sitting directly beside Killarney National Park for when you want to escape into nature. We could have easily stayed several more nights. The spa, which includes a 20-meter pool, sauna, steam room, bubble pool, and outdoor hot tub, is worth booking treatments at in advance.

CFS Travel Perks: Full Irish breakfast included, complimentary use of the full leisure suite, and complimentary parking with EV charging.

The Merrion, Dublin: A Living Art Gallery

Best For: Art lovers and Georgian elegance.

For those who appreciate history and design, The Merrion is essential. The hotel occupies four meticulously restored Georgian townhomes and houses one of Ireland's most significant private art collections.

The Details:

The Art: Works by Irish masters and international icons are integrated throughout the public spaces, functioning as a living gallery.

The Cellar Bar: Located in original 18th-century wine vaults, this is the perfect spot for a sophisticated evening in Dublin.

CFS Travel Perks: Upgrade on arrival subject to availability, daily full breakfast for two, and one complimentary lunch or dinner for two from the set menu in The Garden Room during your stay (excluding alcohol, taxes, and gratuities).
